Bison Roast in Foil 3-4 lb. roast 1/2 envelope dry onion soup mix Preheat oven to 275 degrees F. Place roast on an ample piece of heavy-duty aluminum foil. Sprinkle dry onion soup mix over the meat. Bring edges of foil together, add one cup of water and seal tightly. Place in shallow roasting pan and bake at 275F for 2 to 4 hours or until internal temperature reaches 125-130 degrees F for rare or 140-145 degrees F for medium. Save the juices for gravy.

Bison Sandwich Filling 1 cup of cooked bison roast or cooked ground bison 1 tbsp. onion, minced 1 tbsp. pickle relish 2 tbsp. salad dressing-use your favorite! 1/2 tsp. salt 1/8 tsp. black pepper softened butter rolls or bread-your favorite works well here too! Mix ingridients together. If a little dry add a dash more salad dressing or a dash of cream. Butter your bread and add your filling!
